A flavorful recipe for crab patties seasoned with Cajun spices, Old Bay, fresh herbs, and a touch of citrus, mixed with mayo and mustard, then browned and served as a sandwich or with sides.
In a bowl, combine the crab meat with Cajun seasoning, Old Bay, cayenne, and garlic powder to taste. Stir in fresh chopped parsley and green onions. Set this mixture aside. In a separate pan, add half of a small diced onion and three minced garlic cloves to low heat. Optionally, add lime zest or lemon zest, but be sure to use some of the juice. Sauté until fragrant. Add the sautéed onion and garlic mixture to the crab meat, along with about 1/4 cup of mayonnaise, 1 tablespoon of Dijon or yellow mustard, and Italian breadcrumbs as needed, starting with a small handful. Mix thoroughly to form patties. Add some butter to a pan on medium heat and brown the crab patties on both sides. Serve with sides of your choice or as a sandwich.
