15 mins prepServes 4
A traditional Haitian sweet porridge made from toasted flour, water, evaporated milk, cinnamon, star anise, sugar, and vanilla. It's often served hot for breakfast or as a comforting snack.
1. Toast the flour over medium heat until it turns light blonde. Remove from heat and set aside in a large bowl.
2. In a pot, boil 32 oz of water with a few cinnamon sticks and star anise to release their flavors.
3. Gradually add some of the flavored water to the toasted flour, stirring vigorously to avoid lumps. The mixture should not be too thin.
4. Return the flour mixture to the pot and cook over medium-high heat, stirring constantly.
Note: If the mixture is too thick, add a little water. If it’s too thin, make a slurry with 1/4 cup water and 2 tbsp flour, then mix until smooth and add to the pot.
5. After 15 minutes, add sugar to taste and pour in the evaporated milk. Cook for another 8-10 minutes, stirring.
6. Taste and adjust sweetness as needed. Finish with a splash of vanilla extract.
7. Serve hot with bread for the ultimate experience!
