A flavorful fish taco recipe featuring seasoned cod fillets, toasted tortillas, and a vibrant homemade special sauce made with parsley, green onions, lime, and spices. Customize your tacos with your favorite toppings.
1. Cut cod fillets into pieces. Season the cod with Cajun, cayenne, garlic powder, and paprika, adding a little olive oil to help the seasoning blend.
2. Add a little olive oil to a pan and cook the fish over medium heat for about 2 1/2 minutes per side, adjusting time based on thickness, until cooked through.
3. Once the fish is done, toast your tortillas in the same pan, adding a little butter or oil if needed.
4. To make the special sauce: Combine a small bunch of parsley, 2 green onions, 1/4 yellow onion, 2-3 tablespoons of olive oil, 1/4 cup water, 1/4 cup vinegar, and the juice of 1 lime in a food processor. Season with 1 1/2 tablespoons of chicken bouillon, 1/2 teaspoon cayenne pepper, and 1/2 teaspoon ginger powder. Blend everything until smooth.
5. Assemble your tacos with the cooked fish, special sauce, and desired toppings such as shredded cabbage, salsa, and green onions.
