1. Season 4 boneless chicken thighs generously with Cajun seasoning, garlic powder, mustard powder, salt, and pepper (eyeball quantities). Marinate the chicken for 2-4 hours or overnight, or while you prep other ingredients.
2. In a separate bowl, season 1 1/2 cups of flour with chicken bouillon, cayenne pepper, and salt.
3. In another bowl, prepare an egg wash using 1 whole egg and half & half (or water if using heavy cream).
4. Heat enough oil in a pan to cover the chicken thighs to 350°F (175°C).
5. Batter the chicken thighs by first coating them in the seasoned flour, then dipping them in the egg wash, and finally coating them in the seasoned flour again.
6. Fry the chicken in batches, ensuring not to overcrowd the pan, until an internal temperature of 165°F (74°C) is reached.
7. Once cooked, add Colby Jack cheese to the chicken and melt it in an oven or air fryer.
8. Toast your buns.
9. Assemble the sandwich with your favorite toppings and sauces, such as arugula, tomatoes, yellow onion, chipotle ranch, and hot sauce. Serve immediately.
