Honey Chipotle Fried Chicken Wings

For the Brine: Combine pickle juice, water, and vinegar in a 1:1 ratio. Add salt, pepper, and lime juice. Submerge the wings in the brine and let them sit for at least 4 hours or overnight.

For the Honey Chipotle Sauce: In a food processor, combine 2 cans of chipotle sauce, 3-4 chipotle peppers (or to taste), honey (to taste), the juice of 1 lime, 4-6 cloves of garlic, a small bunch of parsley, and 1/4 onion. Blend until smooth.

To Cook the Wings: Remove the wings from the brine, pat them completely dry, and season them with your favorite seasonings. Heat frying oil to 350°F. Fry the wings for 4-5 minutes, then remove them from the oil. Let them rest briefly, then re-drop them into the hot oil and fry until they are completely cooked through and crispy. Toss the cooked wings in the honey chipotle sauce and enjoy immediately!
