Spicy Peanut Chicken & Shrimp Noodles
20 mins prepServes 3
A flavorful and easy-to-make noodle dish featuring tender chicken and succulent shrimp marinated in a zesty Gochugang blend, then tossed with your favorite noodles in a rich, creamy peanut and chili garlic sauce.
For The Sauce: Mix 1 1/2 Tbsp of peanut butter, 1 1/2 Tbsp chili garlic paste, 1 Tbsp soy sauce, 1 Tsp hoisin, 1/2 Tsp sesame oil, and the juice of half a lime. Set aside.
For The Chicken & Shrimp: Cut the chicken into small bite-sized pieces and add to a bowl along with the shrimp. Add 1 Tbsp of Gochugang, 1/2 small diced onion, 1/2 thinly sliced green onion, 1 Tbsp minced ginger or paste, 1 Tbsp of rice vinegar, Montreal steak seasoning (to taste), and chicken bouillon (to taste). Mix until well combined and set aside.
Cooking Instructions:
1. In a large deep pan, boil your favorite noodles until almost al dente. Make sure to save about 1 1/4 cup of the noodle water (or as needed).
2. Add the reserved noodle water to the peanut butter & chili garlic mix (the sauce) and whisk until smooth.
3. Over medium heat, add about 1-2 Tbsp of a neutral flavored oil to a large pan.
4. Once the oil is hot, add the already marinated chicken and shrimp. Continuously stir so it doesn’t stick.
5. Once the proteins are fully cooked, lower the heat to low, then add the almost al dente noodles to the pan. Slowly fold/mix.
6. Add the peanut sauce, fold a few more times, making sure the sauce is well incorporated with the noodles.
7. Serve immediately and garnish with green onions and parsley. Enjoy!
